Sautéed Chesapeake Ray
Prep Time: 2 minutes
Cook Time: 10 minutes
1 cup olive oil
½ cup cider vinegar
2 ounces lemon juice
2 tablespoons fresh garlic, minced
2 tablespoons oregano leaves
Salt and pepper
4 tablespoons honey
4 to 6 (6 ounce Chesapeake Ray fillet)
Directions
Combine all ingredients, except the ray, mixing well. Marinate the ray in the dressing for about 1 hour. Grill or sauté the ray fillet until medium. Slice as for London broil. (Across the grain of the meat holding knife at a 45º degree angle).
Serves 4-6.
